Funeral Potatoes, Reborn.

If Utah was known for something before I came along, it was probably funeral potatoes. Fitting with the devil theme, this lets the survivors taste a little bit of death.

For me, these potatoes go back to my Uncle Dennis. Every year at Black & White Days in Richmond, Utah, I’d smoke the meats while he handled the Dutch oven potatoes and fried chicken. It was tradition.

Our version is simpler. We don’t use a Dutch oven anymore—demand doesn’t allow it—but the soul of the recipe is still there. These are Dutch oven–style potatoes, built for volume, speed, and comfort.



The Base: Frank Lucas’ Dutch Oven Potatoes

This is where everything starts.

We sauté bacon and onions, then caramelize them with brown sugar. The potatoes are seasoned with our rub to add an extra layer of flavor, then layered with shredded cheese, the bacon and onions, and all that caramelized bacon goodness. Layer upon layer.

That creates Frank Lucas’ Dutch Oven Potatoes—rich, balanced, and dangerous in the best way.



Loaded Version (Choose Indulgence)

Serves 6+ people

What You’ll Need

  • 3 lb Frank Lucas’ Dutch Oven Potatoes

  • 2 lb King Paimon’s Pulled Pork (smoked)

This is comfort food with authority.



Reheat (Family-Style)

  1. Defrost the potatoes and pulled pork before cooking

  2. Place all 5 lb of food into a large stock pot

  3. Boil for 15 minutes

If cooking from frozen, increase time to 30 minutes.

Serve

  • Portion the potatoes first, fluffing them as they come out

  • Top generously with pulled pork

  • Serve hot and let the family dig in

This is one of our most popular meals on the food truck—and one of the easiest to serve.



Sauce (Optional, Never Required)

The potatoes and pork don’t need sauce, but you can absolutely tweak the final product.

Favorites include:

  • Raspberry

  • Cucumber (clean and refreshing)

  • Huckleberry (out of this world)

Any Devil’s Pit sauce works—it just depends on your preference. Adjust the flavor. Adjust the heat. Open your taste buds to a whole new world.
